Abstract

FSSAI Food Safety Registration is mandatory for anyone who intends to be in the food business in India. This set of guidelines laid down by FSSAI covers the entire gamut of safety measures to be undertaken by those organising food festivals or including food in their events: general guidelines, food safety and hygiene, regulatory requirements, workplace hygiene, water, food preparation, handling and storage, personnel facilities, food waste and disposal. This not only involves the preparation of food but everyone who handles it at various stages before it ultimately reaches the customer – raw material procurement, manufacturing, processing, packing and distribution – as well as the agencies who have the authority to sell them.
